One of mine and my hubby's favorite treats to share is a banana split. No matter how rough things seem to be going, for whatever reason a banana split is the perfect pick me up! Oddly enough, neither of us like chocolate. (I know, I'll give you a minute to process that concept...) There are only three types of chocolate that we both love... the sauce that comes on the banana split, Ferrero Rocher, and our recently discovered organic Theobroma Chocolate with Banana Chunks. That's it.
However, it did get me thinking that since two of the chocolates we enjoy are a chocolate banana combination maybe I might be able to find a chocolate banana cream pie recipe we'd both enjoy. Unfortunately, that didn't happen... Turns out we just really aren't chocolately people... but I did find a recipe that I wanted to share for the real chocolate lovers out there in the world! :) Enjoy!!
1 (9 inch) deep dish pie crust, baked and cooled
2 (1 ounce) squares semisweet chocolate
1 tablespoon milk
1 tablespoon butter
2 bananas, sliced
1 1/2 cups cold milk
1 (3.5 ounce) package instant vanilla pudding mix
1 1/2 cups shredded coconut
1 1/2 cups fresh whipped cream - popped in the freezer for about 30 minutes after whipping.
2 tablespoons flaked coconut, toasted
Combine chocolate, 1 tablespoon milk, and butter or margarine in a medium, microwave safe bowl. Microwave on high for 1 to 1 1/2 minutes, stirring every 30 seconds. Stir until chocolate is completely melted. Spread evenly in pie crust. Arrange banana slices over chocolate. Pour 1 1/2 cups milk into a large bowl. Add pudding mix, and beat with wire whisk for 2 minutes. I tossed mine in the kitchenaid mixer with the wire attachment. Stir in 1 1/2 cups coconut. Spoon over banana slices in crust. Spread whipping cream from freezer over pie. (Note original recipe called for cool whip topping, but due to the additives and chemicals in it we don't use it in our house and prefer the real stuff.) Sprinkle with toasted coconut. Refrigerate 4 hours, or until set. (Or you can freeze for 1 hour which is what we did as we were taking to a dinner party.) Store in refrigerator. Enjoy!!
